Pumpkin Muffins (Only 2 Ingredients!)

Last November, I stumbled upon this recipe for Pumpkin Muffins. I had my doubts…really, only 2 ingredients?! But I decided to give them a try…and I LOVED them! I made them for Thanksgiving morning and they were delicious! Very moist. I’m definitely planning to make them again this November.
A friend of mine did the same thing a couple of weeks ago…she made a pumpkin cake…but to make it more fluffy she added half a can of water. She baked in a bundt pan and added a simple drizzle frosting on top. It was a crowd pleaser.
And I haven’t tried these, but I heard through the pumpkin vine they are really good! Pumpkin Brownies…again, two ingredients, a box of brownie mix and a can of pumpkin! Any brave souls?! The blog said her kids couldn’t even tell a difference!

on November 14, 2012 7:50 amDelicious!!!! I tried the Libby’s pumpkin with a boxed pumpkin bread mix adding raisins and it was amaaazing. It was super moist and I love that it was healthy! We all loved it. I can’t wait to try the cake…
