Make These Today…

There are too many other websites that do this so much better.
But you need to make these Chocolate Oatmeal Bar Cookies.
Like right now.
Because they are super-easy and super-duper-yummy.
They are an ooey-gooey mess of chocolate, oatmeal and sweet stuff. Perfect for whipping up for school stuff and, in my experience, teachers especially love them.
See all that chocolate? It’s like I died and went to heaven.
So you’ll need:
Eggs, vanilla, Oats (not the quick stuff, but real oats), Canola Oil, salt, baking soda (***NOTE: when I took this photo, I brought out the baking powder, but luckily caught it for the recipe, but you’ll need BAKING SODA), brown sugar, flour, white sugar, and chocolate chips (not this many, but I only work in Costco sizes).
Mix 3/4 cup brown sugar, 3/4 cup white sugar, 2 eggs, 2 teaspoons vanilla, and the 1 and 1/4 cups of Canola oil together until it is creamy.
In another bowl, mix together 1 teaspoon salt, 1 rounded teaspoon baking soda (NOT POWDER!), 2 cups of flour and 2 cups of oats.
Pour it slowly into the creamed mixture until it looks like this:
You can taste it just to make sure that no one will be in danger here…
You can add a cup or so of walnuts if you’d like. But if you’re not a nut person, just skip this step.
Now here’s the diva ingredient:
Hello, my love. This is 18-20 ounces of chocolate chips. Just get the bigger bag at the grocery store and pour the whole thing in.
At this point my mixer started to groan under the weight of the yumminess, but I told it not to quit.
This bite went directly into my mouth. You can talk to me all the live-long day about raw egg and uncooked flour and I will still do this. My apologies.
Then dump the whole thing into a 9 X 12 baking dish. It should fall with a big THUD.
I used the back of a spatula to negotiate it into the corners. You’ll really need to strong-arm it. Think of it as your extra exercise for the day.
Now throw this into the oven at 375 degrees for 25 minutes and sit on your hands and feet until it’s finished.
Try your hardest to wait until it cools, or it will not hold together. It’s mostly chocolate, after all.
Eat up my friends! And enjoy it.
Here’s the full recipe:
Chocolate Oatmeal Squares
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
2 teaspoons vanilla
1 and 1/4 cup oil
1 teaspoon salt
1 rounded teaspoon baking soda
2 cups flour
2 cups oats
Large package chocolate chips (18 ounce size)
walnuts (optional)
1. Preheat oven to 375 degrees.
2. In a large bowl or stand mixer, mix the brown and white sugars, eggs, vanilla and oil until well blended.
3. Add salt, baking soda, flour, and oatmeal. Add chocolate chips and nuts (optional) last.
4. Pat (it will require some muscle) into a 9 X 13 oblong ungreased baking pan and bake for 25 minutes at 375 degrees.
5. Let set until cool, cut into squares and devour.
