Kentucky Derby Pie

In honor of the Kentucky Wildcats recent NCAA Men’s Basketball Tournament win and in anticipation of the 138th running of The Kentucky Derby (always the first Saturday in May), I want to share with you my mother’s tried and true recipe for Derby Pie.
Kentucky Derby Pie
Ingredients:
1 unbaked pie shell (deep dish)
2 eggs- room temperature
1 cup sugar
1/2 cup flour
1/2 cup butter- softened
1 cup chocolate chips
1 cup chopped pecans
1 teaspoon vanilla
Directions:
Beat eggs at high speed until light and lemon colored. Gradually bean in sugar. Reduce to low speed and be a in flour and butter. Mix well. Stir in chocolate chips, nuts and vanilla. (I could just pour this into custard cups at this point and eat as is!! But we’re not done yet.) Turn in unbaked pie shell. Bake at 350 degrees about 40-60 minutes or until set. Keep an eye on it in the oven and cover with foil if it is getting too brown while baking. Serve warm with vanilla ice cream. Mmmmmmmm!

on April 9, 2012 10:17 amDerby Pie recipes have so many variations. Some people use a pecan pie recipe and just add chocolate chips. Others add bourbon for a tang and a twang.
There has been controversy about the name because the original bakery didn’t want anyone else to use the Derby name. You might see this recipe as River City pie.
I was given this recipe by my good friend Liz Stark over 25 years ago and it has been a family tradition since. Thank you, Liz.
