Chicken Quesadillas

Happy Halloween! This is perfect for feeding hungry adorables right before heading out for trick-or-treating!
I found this recipe in the May 2010 issue of Parents Magazine. (Love that magazine!) These Quesadillas are quite tasty and they are a snap to pull together:
1 14-oz pkg. chicken breast tenders
1 Tbs salt-free fiesta lime seasoning blend (Mrs. Dash)
2/3 cup chopped red sweet pepper
1/3 cup frozen corn
8 6-inch tortillas
Reduced fat shredded cheddar cheese
1 Tbs. Olive Oil
1 clove garlic, minced
Chop red pepper and set aside. Coarsely chop the chicken tenders and toss with the seasoning blend. (I use scissors I can run through the dishwasher and snip those tenders up in no time!) Heat the oil in a large skillet. Add chicken and garlic. Cook, stirring occasionally, for about 4 minutes or until the meat is no longer pink inside. Add pepper and corn to chicken and cook for 2 minutes. Spoon filling onto 4 of the tortillas.* Sprinkle with cheese and top with remaining tortillas. Spritz griddle with nonstick spray and heat. Put tortillas on griddle. Cook each side until brown (about 2 minutes per side).
Serve with guacamole or chips and salsa!
*I actually add some of the mix to every tortilla and fold in half, making sure cheese is touching both interior sides of the tortilla. The cheese melts and makes everything stick and they are so much easier to flip this way when you go to brown the other side. Then I just serve each cut in half after they cool for a bit.
