Boudro’s Famous Guacamole

I have had the pleasure of actually enjoying this at Boudro’s on the San Antonio Riverwalk and the taste takes me back every time!  This is the perfect appetizer for drinks with friends and also a great compliment to any meal with southwest flare:


Juice of 1/4 of an orange
Juice of 1/2 a lime
1 avocado seeded and scooped out of skin
2 Tbs roasted and charred Roma tomatoes diced
1 small Serrano pepper roasted seeded and diced
1 Tbsp medium diced red onions
1 tsp chopped cilantro
sea salt to taste


In a small bowl squeeze the juice from the orange and lime
Add the avocado and chop it up coarsely with fork (do not mash)
Add the rest of the ingredients and mix up the guacamole
Mixture should remain chopped up
Serve with chips

* I often substitute store brand drained petite diced tomatoes from a can for the charred Roma tomatoes and I usually skip the Serrano pepper.  Getting the juice from the orange and lime is easy, just cut in fractions and squeeze over the bowl!

    There is not a single weekend where we don’t make guac for our family football gatherings. I usually make 4-5 avocados and we inhale it in 1 sitting. I’ll have to try the pepper roasted!
