Love in a Mug

We are on snow day number 11 this winter. May I remind you that I live in Southern Missouri. In the past 5 years combined I doubt we’ve had a total of 11 snow days. It’s crazy. I have to laugh at their inability to clear roads around here. If the sun does not come out and melt the snow, well our side streets remain ‘a mess’! We got 2-3 inches of snow 3 days ago. We’ve been out of school for 3 days now (I hear my northern friends laughing!).
This morning, my 12 year old comes in and says, ‘Mom, can we make coffee cake in a mug?’ (she had been peeking over my should and saw this on pinterest the other day!) And because it’s a snow day, why not?! I quickly found the recipe on pinterest again and texted it to her ipod. 15 minutes later I had a warm mug of coffee cake in my hands. It was amazingly delicious! I kinda want her to make me a second one, but I’m practicing self-control.
So without further ado, here is this super easy (and very yummy!) recipe. I hope this adds a little smile and warmth to your long winter days. 🙂 And don’t forget to serve it with hot cocoa after your kiddos come in from playing in the snowbanks.
It’s officially called “{2 minute} Coffee Cake in a Mug” – but I think it should really be called “Love in a Mug” – enjoy!
